What you need:
For the salad:
1 cup raw spinach, rinsed
2 strawberries, rinsed and sliced
½ cup slivered almonds, toasted if desired
crumbled feta cheese, to taste (omit if vegan, or replace with tofu feta)
For the dressing:
½ cup olive oil
¼ balsamic vinegar
1 tsp honey (or liquid stevia or agave nectar if vegan, be sure to use less since these are much sweeter than honey)
1 tsp dijon mustard
1 clove of garlic, minced
salt and pepper to taste
-Place all salad ingredients in a bowl.
-Place all dressing ingredients in a tupperware container or glass jar, shake it to combine. Pour over salad.
